Abstract

The seeking for new market/demand for dragon fruit (especially red-flesh dragon fruit) is very urgent cause the frequent (more and more serious) surplus of this fruit which even request hardly rescue programs from government. This study has successfully experimented to make a specific Dragon Fruit cake, receiving positive feedback from potential target customers so the chance for its application in real production is sp promissing. Basic feature of food product such as moisture, color different and texture/structure of the cake also are analyzed as an important basis for further studies or application activities
