Abstract

In this study, we investigated the demineralization and deproteinization process from the white shrimp head shell (Penaeus vannamei) by the enzyme-combined chemolysis method. The experiments were carried out in 3 phases: (1) Demineralization with 1N hydrochloric acid, the ratio of raw material/acid solution 1/3 (w/v) at 130 °C for 1-3 hours; (2) Deproteinization with SEB Digest F35P enzyme, enzyme/material ratio 0.05-0.2% (w/w) pH 3 at 55 °C for 24 hours; (3) Next demineralization and deproteinization with 35% NaOH for 2-8 hours at 80 °C. The results of the experiment obtained a chitin product with a mineral content of 7.2% (efficiency 92.8%), protein 10.1% (efficiency 89.9%) with a demineralization efficiency of 80% under the HCl 1N condition, ratio of ingredient/acid solution 1/3 (w/v) at 130 °C for 3 hours; protein hydrolysis with enzyme concentration 0.02%, pH 3 at 55 °C for 24 hours, NaOH 35% for 6 hours at 80 °C.
