Abstract
The article analyses some characteristics of the daily eating habits and rituals of the Nung Giang people in Lung Nam, a border commune in Ha Quang district, Cao Bang province, in the context of cultural and economic exchange in the Vietnam-China border area since 1991. The impact of the market economy and the strengthening of the cultural and social exchange among ethnic groups have considerably changed the supply of food and beverages and the structure and style of meals of the Nung. The article also points out that the interaction between the Nung Giang community and their ethnic relatives across the border during trade, family visits, and rituals has contributed to reinforcing traditional taste and forming modern features within the cuisine of this ethnic group in recent years.
