Ở Nam Bộ đâu đâu cũng đất rộng sông dài, nơi nào cũng kinh rạch chằng chịt như mạng nhện, lại lắm lung, hồ, búng, láng..., không nơi nào không nhung nhúc cá, tôm, rắn, cua, rùa, ếch..., đã vậy còn có cả rừng già, rừng thưa, đầy dẫy chim muông, thú to, thú nhỏ. Phía này thì “năm non bảy núi” trập trùng, không biết cơ man nào là “sơn hào”, còn phía nọ thì biển Đông, biển Tây, toàn là “hải vị”!
Nhưng để có được một kho báu “trên cơm dưới cá”, người Nam Bộ không thể không năng động sáng tạo trong trồng trọt, đánh bắt và khai thác chế biến. Cho dù “làm chơi ăn thiệt” người Nam Bộ bao đời nay đã đầu tư không biết bao nhiêu là tim, là óc mới có được thành quả khả quan đầy trí tuệ như ngày hôm nay. Nhờ được kế thừa, phát huy và liên tiếp khám phá, sáng tạo mà văn hóa ẩm thực ở Nam Bộ ngày càng phong phú, đa dạng. Từ đó, miếng ăn và “thói ăn” của người Nam Bộ có những cái rất đặc sắc, rất riêng. Nhưng cái riêng ấy không ngoài cái chung của dân tộc Việt Nam nghìn năm văn hiến.
ABSTRACT
The South is a place of vast land and long rivers. Everywhere one finds interlacing networks of canals. The place also abounds in ponds, lakes... Everywhere large quantities of fish, shrimps, crabs, tortoises, frogs... can be easily found. In addition, there are also jungles and thin forests abounding in big and small animals. At one side are the mountains that provide specialties of the forests. At the other side is the sea that provides seafoods.
However, to build up their treasury of “rice on the land and fish in the water”, the southerners should but be resourceful and creative in their cultivation, fishing and food processing. Even though they are often said “to reap where one has not sown”, the southerners, for ages, have invested boundless will and labor to the place to reach their today’s achievements. Thanks to their inheritation, enhancement, and continuous creation, the culinary art of the South are turning richer and more diversified. Consequently, the southerners’ foods and “eating habit” gains its distinctive characteristics. However, such a distinction never separates itself from the age-old Vietnamese culture.
