Theo dòng lịch sử, Huế trong quá trình định hình bản sắc mang nhiều dấu ấn văn hóa Phật giáo. Hệ thống chùa chiền ở đây vừa phong phú về mặt số lượng, vừa đa dạng trong nhiều nét sinh hoạt. Ẩm thực già lam trong dòng chảy văn hóa Huế, do sự chi phối của các điều kiện địa-sinh thái, văn hóa-lịch sử đã hình thành nên nhiều nét đặc trưng. Ẩm thực già lam Huế đơn giản, đạm bạc nhưng đa dạng và tinh tế, là một khía cạnh phản ánh khá rõ nét chân dung ngôi chùa Huế thuở sơ khai. Chúng tôi cho rằng, đó là một sản phẩm văn hóa đầy hấp lực trong sự khám phá của khách hành hương.     

Nét ấn tượng của ẩm thực già lam Huế chủ yếu là những món ăn đạm bạc, đơn giản, song nhờ tài khéo trong chế biến mà trở thành những món ăn dễ nhìn, hợp khẩu vị. Đâu đó, trong các buổi vía, kỵ, chúng ta có thể nhìn thấy những món chay giả mặn khá cầu kỳ trong cách chế biến và bày biện ở nhà chùa. Từ đó cũng không phải không có những lời ra tiếng vào, nhưng thật ra tất cả không ngoài mục đích phô bày sự khéo léo của bàn tay đời thường, chứ hoàn toàn không phải là sự vọng tưởng của người xuất gia như nhiều người dễ có sự ngộ nhận.

ABSTRACT   

The history of Huế bears deep influence of the Buddhist culture. Therefore, the system of Buddhist pagodas here are abundant, with their diversified activities. The Buddhist culinary art, in the life of the culture of Huế, under the impact of the local geo-ecology, historical-cultural conditions, attains numerous typical traits. The Buddhist culinary art of Huế is plain and simple, but diversified and subtle. One can say they reflect the image of the local simple Buddhist pagodas on the first days of the land. We believe Huế culinary art is an attractive cultural product that deserves tourists’ attention and discovery.

What impresses us is plain dishes that become, with clever preparation, pleasant to the eyes and satisfies guests’ tastes. Here and there, in the celebrations dedicated to the Buddhas or the pagodas’ founders, we find vegetarian foods deftly prepared in the form of foods made from animals that demonstrate high ability in skills of preparation and presentation. There has been criticism as to this kind of dishes, but in fact the cooks, in this case, only want to show their deftness. It definitely does not indicate any wrong desire for the foods made from animals.
