Microbial contamination level of fresh pork in slaughterhouses and markets in Quy Nhon city, Binh Dinh province

Abstract

A total of 120 fresh pork samples were collected from the slaughterhouses and markets (60 from slaughterhouses and 60 from markets) in Quy Nhon city of Binh Dinh province for determiningthe contamination level of total aerobic bacteria, E. coli and Salmonella. The studied result showed that the number of fresh pork samples infected with total aerobic bacteria in the slaughter houses was 34/60 (53.3%) and this number was 56/60 (93.35%) in the markets, with the bacterial contamination level exceeded permissible standards. The prevalence of pork samplesfrom the slaughterhouses contaminating with the number of E. coli exceeding the permissiblestandards was 5% (3/60 samples), meanwhile those from the markets was 13.35% (8/60 samples). Salmonella was not detected in all the collecting pork samples. These results partly reflect the situation of microbial contamination in pork due to slaughtering process, transportation,storage and sale in the markets in Quy Nhon city, Binh Dinh province.
