Assessment of some food hygiene indexes in pork in Quy Nhon city, Binh Dinh province

Abstract

The result of this research showed that:The change of bacterial contamination in pork at the Dam Market and Coopmark Supermarketwas different according to the times and selling places. The rate of pork samples was not met the Vietnamese Standards on food hygiene at 7h to 8h, and 11h to 12h was 16.66% and 33.33%, respectively. In addition, the rate of un-qualified pork samples on food hygiene at the Dam market was higher than that in Coopmark Supermarket.The rate of pork samples contaminating with Salmonella sp. and S.aureus increased graduallyby the selling times; at 7h-8h, this rate was 56.7% and 18.33% respectively. Also, there was a difference on the bacterial contamination rate between the supermarket and traditional market.
