STUDIES ON PROTEIN RECOVERY FROM SHRIMP SHELLS DURING CHITIN PRODUCTION BY ELECTROCHEMICAL METHOD

Abstract

In this work we have studied in detail the kinetics of proteins’ solubilisation in the process of electrolytic extraction of chitin from shrimp shells. The experimental results showed that: Most of the proteins in shrimp shells was extracted in catod chamber; Protein concentration in this chamber was continuously increased in the electrolysis process and increased nearly 1.5 times by heating catolite with electrolysis-treated shrimp shells at 85 ± 5oC for 30 min, the extracted protein amount was little dependent on the concentration of NaCl and linearly proportional to the amount of shrimp shells used for electrolysis.

From the obtained results has made the simple procedure for extracting proteins in the production of chitin from shrimp shells
