STUDY ON EFFECTS OF CHITOSAN CONCENRATION ON QUALITY AND TIME OF THE STORAGE OF CITRUS SINENSIS

Abstract

Chitosan, which originates from shells of shrimp, crap, is a so popular
polymer in nature. With many biological activities, especially the anti
microorganism activity, chitosan has been applied in the food storage. This
article presents the application of chitosan in the storage of Citrus sinensis, study
effect of chitosan concentration on quality and time of the storage process. After
harvesting, Citrus sinensis were treated by chitosan liquid with various
concentrations (1,0- 2,0%). As a result, there was significant improvement in
quality and time of the storage process of Citrus sinensis when treated by
chitosan and chitosan liquid with concentration of 1,5% was the best. With this
concentration, the time storage of Citrus sinensis could be prolonged around 70
days with good quality.
